Ingredients for Tomato Rice

  • 1/2 cup of rice
  • 1 1/2 tbsp oil
  • 1/2 tsp split black gram
  • 2-3 split red chillies
  • 1/2tsp mustard seeds
  • Two big  garlic cloves and a small piece of ginger
  • Cashew nuts
  • turmeric powder, 1/2tsp Kashmiri chilli powder, little garam masala.

Tomato Rice Tamil Style

Today we are going to make Tomato rice. Let’s move on to our tomato rice recipe. So, let’s start making our tomato rice now.  Soak whichever rice you use for 20 minutes. After that cook it in lots of boiling water and salt. Never cook in little water.

Cook it till it has reached 75% of softness. Once it is reached 75% cooked, strain the rice and keep aside. When it’s done this way, due to the heat, the rest of the cooking will also take place slowly. Just like how we do for biryani, cook it 75% and then strain it.

1/2 cup of ponni rice

I have used 1/2 cup of ponni rice. You can use raw rice, white rice, basmati rice also. But I shouldn’t use traditional red rice here. If you want to make the tomato rice in the morning, you can cook the rice at night, strain it and refrigerate it.

Add 1 1/2 tbsp oil

So that it would be easy to make in the morning, first, prepare the masala of the rice, we first heat a frying pan. Add 1 1/2 tbsp oil. Once it’s hot, we shall add some lentil to it. It’s optional. Then 1/2 tsp split black gram and after that 2-3 split red chillies.

Add 1/2tsp mustard seeds

Fry these till the raw smell goes. Then we shall add 1/2tsp mustard seeds. Once the mustard seeds start to splutter, we can add few cashew nuts. It is optional. I am adding it because I like it. Next, we shall add some curry leaves to this.

Add 1tsp chopped ginger and garlic each

Reduce the flame and add 1tsp chopped ginger and garlic each. 1tsp would be two big garlic cloves and a small piece of ginger. Stir all this well of low flame till the raw smell goes.

Now I shall add two finely chopped green chillies. Ginger, garlic and green chillies with the dals are what we are sauteing now. The colour of the dals is beginning to change.

Add the powders and tomatoes

Always saute on low flame so that it doesn’t get burnt. Once the raw smell goes we shall add the powders and tomatoes. It is an easy recipe, and many people do it in many ways. I have even tried it in many ways. Now we shall add the powders.

Add little turmeric powder, 1/2tsp Kashmiri chilli powder, little garam masala. Some people add raw spices like cinnamon, cloves, bay leaves at the beginning itself. Now the natural smell of the powders has gone. We are going to add two pinches of asafoetida powder to this.

Now the raw smell has gone. We shall add finely chopped two small ripe tomatoes which are not very sour. If you are using big tomatoes, one will do.

But make sure it’s ripe. Only then the tomato rice will have the correct taste. We shall add little salt now.

Since we have cooked the rice with salt, be careful while adding it. When you add salt while cooking rice, it gets absorbed to the rice.

Medium flame

Now we shall cook this covered on medium flame till the tomatoes melt to a paste and the oil is seen on top. As I had said, tomato rice can be made in minutes if you have the rice cooked the previous day or so.

So, now let’s close and cook it. Often stir it so that it shouldn’t get burnt.

Some people use onions in this, but I don’t. If you want you may add 1/2 sliced onion to this in the beginning while sauteing As I said, many people do it in many ways.

Coconut milk & Chilli powder

And as you know, coconut milk is one of my favourite ingredients, and I shall be using little in this recipe. A unique taste is added to the rice when milk is added.

You may avoid it if you want. Coconut milk should be added to this only when it’s completely cooked.

Now it’s cooked well. If you want you can use the regular chilli powder in this. It is just for the colour. If you are using the normal one, add just 1/4tsp. Since we have added green chillies, that spice is also there in it.

You may increase the ingredients according to your need. If you are taking 1 cup of rice, you may have to take four small tomatoes. My quantity is just for 1/2 cup rice.

Do you know why I am making so little? Its because it’s just for me. You can change the measurements according to the number of people. Now all the raw smell has gone, and the tomatoes are cooked well.

Use 1/4 cup of hot water

If you are not using coconut milk, you can pour a 1/4 cup of hot water to this. The red colour is seen due to the Kashmiri chilli powder. If it were the regular chilli powder, you would not get this colour after adding coconut milk.

Once this boils well, we shall add the cooked rice to this. You should always make sure the rice is cooled completely. Or else it will look like all mashed up. You may even refrigerate to cool the rice. You can taste the masala at this stage.

It can be used as a curry at this stage if it made a little more gravy then it can be used as the Tamil tomato curry. Adding a little salt and a pinch of sugar. It’s optional, but I always do it. Especially when coconut milk is also there, some people cook rice in coconut milk.

Mix cooked rice with masala

It is also tasty, and you can try it in different ways. It is the easiest way of making it. Now, let’s add the cooked rice to the masala mix. Stir it softly. The colour looks fantastic. I love all these types of rice except the tamarind one. I like it when everything is mixed well.

The rice should all be separate from each other. It is now the correct consistency. We shall cover this and cook for 2 minutes till all the masalas and rice are mixed well.

At last, we shall garnish with coriander leaves. You can adjust the spice level as you wish.

Now, please switch off the gas and garnish it with coriander leaves. Since I don’t like it much, I shall add just a little. You may add more if you want. Mix well now. That’s it.

As it cools down, it will dry up more and taste better too. I am going to have this with Tzatziki.

You can even have it with my lemon-dates pickle. That’s going to be my combination today. So our tomato rice is ready. Let me taste and see how it is.

It’s yummy, and I have added Kashmiri chilli powder to this just for the colour. I prefer the normal chilli powder taste-wise.

I am going to keep this closed for a while and shall serve it later. Hope you all liked my easy tomato rice.
